
This Turkey Meatloaf is chock full of vegies and so tasty! We've omitted the eggs and grains, using mushrooms as a binder which gives this meatloaf an unami flavor that packs a falvorful punch. Turkey Meatloaf using Nada Mato's tomato-free ketchup

Ingredients
- 2 cups finely chopped mushrooms
- 1 carrot peeled and grated
- 1 Onion minced
- 4 cloves Garlic minced
- 1/4 cup Parsley chopped
- 2 teaspoons Salt
- 2 tablespoons fresh Thyme or 1 teaspoon Dried Thyme
- 2 punds ground Turkey
- 1/2 cup Nada Mato Tomato Free Ketchup

- Pre-heat oven to 350 degrees
- Sautee mushrooms, carrot, onion and garlic until soft (about 5 minutes)
- In a large bowl, combine the turkey with the sauteed vegetables, garlic and remaining ingredients
- Form into a loaf and bake for 50-55 minutes until internal temperature reaches 155 degrees
- Once fully cooked, remove from oven and pour approximately 1/4 cup of Nada Mato Tomato-Free Ketchup on top of meatloaf, cover and put back in oven for another 5-10 minutes
- Allow to sit for at least ten minutes before cutting into
