Paleo Shrimp Tacos

AIP and Paleo Shrimp Tacos


Ingredients:


For the shrimp:


  • 1 lb shrimp (peeled & deveined)

  • 1 tbsp avocado oil

  • ½ tsp sea salt

  • ½ tsp smoked paprika (omit for AIP or if nightshade sensitive)

  • ½ tsp garlic powder

  • ½ tsp cumin

  • ¼ tsp chili powder (omit for AIP or if nightshade sensitive)

  • Juice of 1 lime


For the avocado lime slaw:


  • 2 cups shredded cabbage (green or purple)

  • ¼ cup cilantro, chopped

  • 1 ripe avocado

  • 1 tbsp olive oil

  • 1 tbsp lime juice

  • ½ tsp sea salt

  • 1 clove garlic, minced


For the paleo tortillas:


  • 1 cup cassava flour

  • ¼ cup almond flour (or coconut flour for nut-free)

  • ½ tsp sea salt

  • ½ cup warm water

  • 1 tbsp olive oil



Instructions:


 Make the Paleo Tortillas


1. In a bowl, mix cassava flour, almond flour, and sea salt.

2. Add warm water and olive oil, mixing until a dough forms.

3. Divide into 4-6 balls, roll out into thin tortillas.

4. Heat a dry skillet over medium heat and cook each tortilla for 1-2 minutes per side. Set aside.


 Prepare the Avocado Lime Slaw


  1. In a blender, blend avocado, olive oil, lime juice, sea salt, and garlic until smooth.

  2. Toss the dressing with shredded cabbage and cilantro. Set aside.


 Cook the Shrimp


  1. In a bowl, toss shrimp with avocado oil, sea salt, smoked paprika, garlic powder, cumin, chili powder, and lime juice.


  2. Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side until pink and slightly charred.


 Assemble the Tacos & Serve


  1. Fill each tortilla with shrimp and avocado lime slaw.
