Turkey Meatloaf

This Turkey Meatloaf is chock full of vegies and so tasty! We've omitted the eggs and grains, using mushrooms as a binder which gives this meatloaf an unami flavor that packs a falvorful punch. The entire recipe takes just minutes to put together and is a delcious and healthy meal everyone will love!

Ingredients:



  • 2 cups finely chopped mushrooms

  • 1 carrot peeled and grated

  • 1 Onion minced

  • 4 cloves Garlic minced

  • 1/4 cup Parsley chopped

  • 2 teaspoons Salt

  • 2 tablespoons fresh Thyme or 1 teaspoon Dried Thyme

  • 2 punds ground Turkey

  • 1/2 cup Nada Mato Tomato Free Ketchup




Directions:

  • Pre-heat oven to 350 degrees

  • Sautee mushrooms, carrot, onion and garlic until soft (about 5 minutes)

  • In a large bowl, combine the turkey with the sauteed vegetables, garlic and remaining ingredients

  • Form into a loaf and bake for 50-55 minutes until internal temperature reaches 155 degrees

  • Once fully cooked, remove from oven and pour approximately 1/4 cup of Nada Mato Tomato-Free Ketchup on top of meatloaf, cover and put back in oven for another 5-10 minutes

  • Allow to sit for at least ten minutes before cutting into
