Albóndigas, or Mexican meatballs, are typically served in a rich tomato-based sauce. In this tomato free version, we use Nada Mato Tomato Free Ketchup to create a tangy, slightly sweet glaze that pairs perfectly with these juicy, spiced meatballs.

Ingredients:


  • 1 lb ground beef (or ground turkey, preferably grass fed)

  • 1 egg

  • ¼ cup almond flour

  • ½ tsp sea salt

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp cumin

  • ½ tsp smoked paprika (skip if sensitive to nightshades)

  • ½ cup Nada Mato Tomato Free Ketchup

  • 1 tbsp fresh chopped cilantro (optional)



Instructions:


  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.

  2. In a bowl, mix the ground meat, egg, almond flour, sea salt, garlic powder, onion powder, cumin, and smoked paprika.

  3. Roll the mixture into 1-inch meatballs and place on the baking sheet.

  4. Bake for 18-20 minutes until cooked through.

  • ½ avocado, sliced

Instructions:
